  • 500g chicken thighs, skinless

  • 1 bunch green asparagus, tough ends removed

  • 2 tablespoons olive oil

  • 2 garlic cloves, minced

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 1 teaspoon smoked paprika

  • Black pepper, to taste

  • Juice of half a lemon

  • Fresh parsley, chopped (for garnish)


  1. Marinate the chicken thighs: In a large bowl, mix the olive oil, minced garlic, dried thyme, rosemary, and smoked paprika. Add the chicken thighs and mix well to ensure the chicken is fully coated with the marinade. Let it marinate for at least 30 minutes (longer is better if you have the time).

  2. Heat the grill or grill pan: Preheat a grill or grill pan over medium heat.

  3. Grill the asparagus: Drizzle the asparagus with a bit of olive oil and sprinkle with black pepper. Grill the asparagus for about 4-5 minutes, turning halfway through, until slightly charred and tender. Remove from the grill and set aside.

  4. Grill the chicken thighs: Place the marinated chicken thighs on the grill or grill pan and cook for about 6-7 minutes on each side, until golden brown and cooked through. The internal temperature of the chicken should reach at least 75°C (165°F). Remove from the grill and let rest for a few minutes.

  5. Serve: Arrange the grilled asparagus on a serving platter and place the grilled chicken thighs on top. Drizzle with the juice of half a lemon and garnish with chopped fresh parsley.
