  • 4 salmon fillets

  • 3 leeks, sliced into rings

  • 2 red bell peppers, sliced into strips

  • 1 zucchini, sliced

  • 2 carrots, thinly sliced

  • 2 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1 teaspoon dried dill

  • 1 teaspoon dried thyme

  • Black pepper, to taste

  • Juice of half a lemon

  • Fresh parsley, chopped (for garnish)


  1. Preheat the oven: to 200°C (392°F).

  2. Prepare the vegetables: In a large bowl, mix the leeks, bell peppers, zucchini, carrots, and garlic with 1 tablespoon of olive oil. Add the dried thyme and black pepper to taste, and mix well.

  3. Roast the vegetables: Spread the vegetables evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for 20-25 minutes, or until they are tender and lightly browned.

  4. Prepare the salmon fillets: Rub the salmon fillets with the remaining tablespoon of olive oil, dried dill, and black pepper. Heat a large skillet over medium heat and place the salmon fillets skin-side down in the pan. Cook the salmon for about 3-4 minutes on each side, or until cooked through.

  5. Plate and serve: Remove the vegetables from the oven and distribute them onto plates. Place the salmon fillets on top of the roasted vegetables. Drizzle with lemon juice and garnish with fresh parsley.
