  • 2 large zucchinis, sliced thinly (for the "lasagna sheets")

  • 500g lean ground beef

  • 1 red bell pepper, diced

  • 1 yellow bell pepper, diced

  • 1 large onion, finely chopped

  • 1 leek, sliced into thin rings

  • 3 cloves garlic, finely chopped

  • 2 large sweet potatoes, peeled and sliced thinly

  • 1 can (400g) diced tomatoes

  • 2 tablespoons tomato paste

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • 1 teaspoon dried thyme

  • Black pepper, to taste

  • 2 tablespoons olive oil

  • Fresh basil or parsley, finely chopped (for garnish)


  1. Preheat: Preheat the oven to 180°C (350°F).

  2. Prepare Vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onion, garlic, and leek and cook until soft and fragrant, about 5 minutes.

  3. Cook Ground Beef: Add the ground beef to the skillet and cook until browned and fully cooked. Add the diced bell peppers, tomato paste, and diced tomatoes. Stir well and season with oregano, basil, thyme, and black pepper. Let the mixture simmer for 10 minutes.

  4. Prepare Zucchini and Sweet Potato: While the beef mixture is simmering, slice the zucchinis and sweet potatoes thinly. The zucchini will be used as "lasagna sheets," and the sweet potato will be an additional layer.

  5. Assemble Lasagna: Lightly grease a baking dish with the remaining tablespoon of olive oil. Start with a layer of zucchini slices on the bottom of the dish. Next, add a layer of the beef mixture and then a layer of sweet potato slices. Repeat these layers until all ingredients are used, finishing with a layer of zucchini.

  6. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for another 10-15 minutes, or until the top is lightly browned and the vegetables are tender.

  7. Serve: Remove the lasagna from the oven and let it rest for 5 minutes before slicing. Garnish with fresh basil or parsley.
